Corn Potage

Ingredients

1 tbsp grapeseed oil
1 small (120g) onion, peeled, finely chopped
1 large (200g) potato, peeled, finally chopped
375g vegetable stock (270g water + 2 tsp mushroom powder)
250g frozen sweetcorn
200ml OraSi rice milk
Salt and white pepper, to taste
Handful fresh coriander, finely chopped

Instructions

Method

1. Sauté the onions until browned, add the potato, stock and sweetcorn.
Cook until the potatoes are tender.
2. Puree the soup, add the rice milk, season with salt and pepper.
Sprinkle over with coriander.
