(GlutenFree Recipes) Chicken Nuggets


8 pieces skinless chicken thigs, cut into bit size
2 cups organic brown rice breadcrumbs
1/3 cup all-purpose rice flour
2 eggs (or egg replacer), whisked
500ml bran rice oil
Dash of salt and pepper


  1. Season chicken with salt and pepper. Lightly coat with rice flour, dip in whisked eggs and roll it on a plate of breadcrumbs. Press well.
  2. Fry nuggets in hot oil at 170°C for about 3-4 mins until cooked.
  3. Put on paper towel to drain excess oil and serve hot.
