Hotpot with almond milk

Ingredients

100g thinly sliced pork loin
200g pak choi, cut in half
1 pack enoki mushrooms, ends trimmed
6 fresh shiitake mushrooms
2 spring onions, thinly sliced
1 (350g) pack soft tofu, cut into cubes
1 small carrot, cut into slices
250ml vegetable stock
250ml OraSi barista almond milk
2 tbsp miso
2 tbsp soy sauce
Salt and freshly ground black pepper

Instructions

Method

1. Bring the ingredients for the almond milk soup to a boil. Cook the remaining
ingredients at the table.
