Meatballs with Tomato Sauce

Ingredients

800g Canned Chopped Tomatoes
5 Garlic Cloves, crushed
2 tsp Dried Oregano
150ml Olive Oil
1/2 tsp Salt
Chopped fresh parsley
Meatballs:
1 small Onion, grated
Finely grated rind of 1 large Lemon
2 Garlic Cloves, crushed
2 tsp Dried Oregano
1 tsp Salt
3/4 tsp Pepper
1 large Egg White, lightly beaten
500g fresh Pork Mince
250g Fresh Beef Mince
4 tbsp milled Chia Seeds

Instructions

Tomato Sauce:

  1. Put tomatoes into a pan with the garlic, oregano, 4 tablespoons of oil and the salt. Boil then simmer until thickened.

Meatballs:

  1. Mix the onion, lemon rind, garlic and oregano with the salt, pepper and egg white.
  2. Combine the beef and pork in a bowl. Add the egg white mixture and mix together well. Mix in the chia seeds. Leave to stand.
  3. Divide the mixture into 20 balls, rolling until firm.
  4. Heat the remaining oil in a frying pan. Fry the meatballs for about 8 minutes, turning frequently, until brown. Transfer onto kitchen towel to drain and add into tomato sauce to simmer for 5 minutes.
  5. Transfer to plates and top with parsley and parmesan.
