- In a saucepan on low heat, boil the rice with the Rice Drink and the lemon peel, until the liquid is almost completely absorbed, approximately for 40 minutes. Allow to cool slightly, then add all the remaining ingredients except the egg whites and 1 tablespoon of sugar. Stir to make the mixture homogeneous. Stir in the egg whites with 1 tablespoon of sugar.
- Pour the mass into the molds greased with Soy Margarine and sprinkle with a little cornstarch and bake at 150 degrees for 35 minutes.
- Caramelized apples: peel the apples, divide them into wedges and transfer them to a saucepan with Soy Margarine, sugar and lemon juice. Let the apples caramelize for 5 minutes. Serve the cupcakes with caramelized apples.
