Orasi Almond/Hazelnut Tart

Ingredients

190g Maxime Gioia Special TW
350g Cake Flour
120g Icing Sugar
45g Almond Flour
65g Whole Eggs
Filling Ingredients:
260ml OraSi Almond or Hazelnut Drink
130ml OraSi Rice Whipping Cream
3g Syrup
5g Agar

Instructions

PREPARATION of the TART:

  1. Put the Maxime Gioia Special TW in a stand mixer and mix with the flour in order to obtain a sandy texture. Add the remaining ingredients and work the dough homogeneously, then cover it with some plastic wrap and store it in a fridge for about 1 hour.
  2. Spread the dough 2mm thickness and coat to the ring. Bake at 160。C for 10 minutes.
  3. Unmold, drizzle the circles with yolks and store in fridge.

 

FILLING PREPARATION:

  1. Put all the ingredients into the pot to cook until boiling.
  2. Cool down and fill into the tart. Store in fridge.
