Smoky Pimenton and Sherry-Roasted Alaska Black Cod

Ingredients

2 kg Alaska Black Cod (Sablefish) Fillets or Portions
Salt and pepper
1/2 cup Dry sherry
1/4 cup Parsley, chopped
2 Tbsp. Pimenton (smoked Spanish paprika)

Instructions

  1. Season black cod to taste with salt and pepper, marinate in sherry and parsley.
  2. Sear cod on both sides, then back in 350*F oven until cooked through and brown on edges.
  3. Sprinkle with pimenton.
