Tiger-balls

Ingredients

150g black sesame seeds
150g dates
75g desiccated coconut
3 tablespoons black tahini
1/4 tsp salt
1 tsp vanilla extract
1 tbls maple or brown rice syrup
1 tbl spoon coconut oil
50 g dried mango
50g dried apricots
Extra black sesame seeds for rolling

Instructions

  1. Place the sesame seeds, dates, coconut, tahini, salt and vanilla into a high speed blender and process until fine breadcrumbs.
  2. Add the syrup and coconut oil and blend till a sticky dough forms.
  3. Roll into 12 x 35g balls
  4. Soak the mango and apricots in boiling water for 20 minutes to soften. Drain and squeeze out excess water, then finely dice. Divide the mixture into 12 x 10g balls.
  5. To make the Tiger Balls, flatten out the black ball in the palm of your hand. lay the smaller ball mango/apricot ball mix in the center and wrap the black dough up around the orange filling.
  6. Roll into a smooth ball, and then roll in a bowl filled with extra sesame seeds.
  7. Refrigerate in an airtight container.
