Walnut Chantilly with Pears and Chocolate


300g OraSi Rice Whipping Cream
250ml OraSi Walnut Drinks
125g Black Chocolate
30g Icing Sugar
20g Wheat Starch
3 Ripe Pear
1/2 Vanilla Bean


  1. Prepare the walnut cream by warming OraSi drink over a low heat
  2. Sieve starch and icing sugar and dd it all to the cream along with the vanilla seeds
  3. Stir over medium heat until it thickens
  4. Cool and refrigerate for 3 hours
  5. Dice the pears
  6. Whip the OraSi rice whipping cream
  7. Whisk the chilled walnut cream and add it to the whipped rice cream.
  8. Pour into the cocotte and put in the fridge.
  9. Melt the chocolate, add the rice whipping cream then cover the cocotte with melted chocolate and chopped nuts.
  10. Put in the fridge.
